Mediterranean Food Festival @ Fairfield by Marriot

Recently i have attended The Mediterranean Food Fest going on at Fairfield by Marriot Amritsar @fairfieldamr.
By chef @sabharwalmaninder.

Lots and lots of unique and flavourful dishes were prepared.
Specifically this pita pocket went into my one of the favourites.

Amazing crispy falafel stuffed in soft pita pocket served with great dressings and lip smacking pineapple salsa sauce.

A crossover between popular Mediterranean flavours and Indian techniques, the Mediterranean Food Festival by Fairfield Marriot brings something fresh on the table for the foodies this festive season. Mediterranean region, with its food designated as world heritage, is known for its rich flavours, fresh produce and inherent nutritional value. The 10-day festival promises to offer all these experiences with a bit more.
A selected buffet with Greek, Italian, Spanish, Turkish and French origin recipes, including popular dishes like Cous Cous, Baba Ganoush, Pan-fried Darne of Cat fish with Sauce Vierge, stuffed cabbage rolls and a variety of dips and salads, the menu is interesting as well as high on health.

“Mediterranean food is known to merge taste with health. So, we have kept the recipes as authentic as possible. A variety of cheese, lentils and vegetables are inculcated in preparing the dishes, given the fact that they are consumed at large in the Mediterranean basin as while as India. This Mediterranean food fest has all kinds of Greek, Italian, Spanish, Turkish, French and Mexican origin delicacies which are the region’s top specialties. All the dishes have been precisely prepared and presented with the Mediterranean touch. People coming to the fest will get a true taste of Mediterranean cuisine which has been prepared in an absolutely authentic manner,” said chef Maninder.

Along with the specific menu, he has also added his twisted versions of desserts in the menu, including Angar ka Jamun, a version of chocolate filled Gulab Jamun and baked rabri with motichor filling.  Mediterranean cuisine is as complex as other ancient cuisines, with techniques and skills developed over thousands of years of history.
“Vegetables play an important role in the Mediterranean cuisine and famous for its taste and rich delicacies of the Traditional Mediterranean cuisine. So, we have also done a mirchi ka halwa, a signature dish that presents green bell pepper or capsicum as a sweet dish. Also, a lot of pickled vegetables and salads with specific herbs like dill have been kept for health food lovers,” said Maninder, who has recently come to Amritsar with 18 years of experience as a culinary expert.
The festival begins on October 11 and will be open for dinner for the public.
